Abstract
Concentrations of O2 and CO2 within the packages equilibrated to about 2.5 and 8%, respectively, within 24 hr and remained almost constant over 96 hr storage (20C). Reduced ascorbic acid, as determined by titrimetric analysis, was significantly greater in packaged broccoli (82 vs 54% retention). Moisture content was greater (88.3 vs 86.1%), peroxidase activity was lower (86 vs 142%), Instron shear values smaller (1.0 vs 1.4 kg/mm), and total chlorophyll retention greater (99 vs 37%), in packaged broccoli after 96 hr.
No significant differences were found in total aerobic population growth between packaged and nonpackaged broccoli.
