Abstract
Transversal banana slices (6 mm thick) are considered representative of whole fruit and can be vacuum infiltrated to test active substances.
However, the manipulation, cutting and treatment of these slices affects their physiological behavior.
There is an increase in ethylene production which decreases to low levels in less than 24 hr.
The effect of cutting on this stress ethylene has been studied: ethylene production, changes on ACC and MACC levels, and EFE activity in both peel and pulp tissue.
A rise in ACC in the pulp generates a rise in ethylene production.
The effect on EFE activity, ACC and MACC seem to be limited to the 2mm zone immediately next to the cut surface.
