DIFFERENCES BETWEEN THE TWO OPPOSITE SIDES OF BICOLOURED APPLES: SENSORY AND INSTRUMENTAL MEASUREMENTS

Abstract
On one hand, usual physical and chemical analyses take heterogeneity of opposite sides of apples into account.
On the other hand, sensory analyses don’t.
So, first of all, if we want to do the same and in order to make a more reliable sensory analyse of apple, we have to verify that assessors are also able to bring to the fore this difference inside a bicoloured fruit.
The triangle test done by assessors of different levels shows a difference of sensitivity of assessors linked with their experience: the expert panel is the only one which observed differences between the two opposite sides of unpeeled apples when other consumers don’t.
That really demonstrates the significance of the presence of skin in sensorial perception.
The profiles show that the red side is sweeter and firmer than the shaded one.
In conclusion, the methodology we’ll propose in order to better the quality of studies of bi-coloured fruits must take this difference into account.
This solution is based on the obligation to taste the same face of the fruit.
