Abstract
Tree nutrition during fruit development is the most important factor that influences fruit quality and postharvest behavior (Duarte, 1991). The purpose of this research was to evaluate the nutritional composition of peach fruit based on N, P, K, Ca, Mg, Fe, Mn, Cu, Zn and B content and phenylalanine ammonia-lyase and polyphenoloxidase activity of local race Zacatecas-type peaches.
The research was conducted in an orchard of ten-year-old trees that had been managed under minimum tillage for five years.
Two fertilizers were evaluated as foliar and soil treatments plus the control.
The nutrients evaluated were N, P, K, Ca, Mg, Mn, Cu, Zn and B as well as phenylalanine ammonia-lyase and polyphenoloxidase activity.
The fertilization affected the mineral concentration of N, P, K, Ca, Mg, Fe, Mn, Cu Zn and B in the fruit and phenylalanine ammonia-lyase and polyphenoloxidase activity.
In general fruit from trees with soil fertilization plus foliar applications of Ca, Mg, B and Mo diminished the activity of phenylalanine ammonia-lyase and polyphenoloxidase, as these fruits were less susceptible to internal browning.
