Sorbitol accumulation in pome fruit related to different storage conditions

Abstract
The preservation of pome fruit during commercial long-term storage typically resolves around a reduction in oxygen partial pressures (pO2), in either static controlled atmosphere (CA) or dynamic controlled atmosphere (DCA) settings.
The metabolism of fruit carbohydrates may show several forms of response to low oxygen stress.
Since there is documented enhanced accumulation of sorbitol in yeast in response to drought or salt stress, the sorbitol content of fruit may also play a role in physiological adaptation mechanisms under low oxygen stress in CA or DCA. This study investigated the sorbitol content in six apple cultivars ‘Braeburn’, ‘Fuji’, ‘Jonagold’, ‘Magic Star’, ‘Pinova’, and ‘Red Prince’, and the pear cultivar ‘Xenia’ under three storage conditions, which are regular atmosphere (RA), controlled atmosphere (CA), and dynamic controlled atmosphere based on fruit CO2 production (DCA-CD). The results showed a mutual dependence between cultivar and storage conditions, showcasing diverse fruit dynamics in sorbitol accumulation after a prolonged storage period.
