Effects of packaging conditions and genotypes on the quality of mung bean sprouts

Abstract
Mung bean (Vigna radiata (L.) R. Wilczek) sprouts are popular but perishable vegetables in Thailand, widely consumed fresh and cooked.
This study examined how packaging conditions affect the postharvest quality of three mung bean genotypes (‘CN84-1’, P22, and SUPER5) by assessing weight loss, sprout length, color, firmness (peak force), bacterial loads, and sensory attributes.
Sprouts were stored at 4°C for 0, 3, and 6 days in different plastic bags: polypropylene (PP), perforated PP (PPp), polyethylene/polyethylene terephthalate (PE/PET) with and without vacuum packaging, and modified atmosphere packaging (MAP). Weight loss was unaffected by genotypes or packaging conditions across the storage period.
In contrast, sprout length exhibited significant variation influenced by both genotypes and storage conditions.
Significant differences in a* and b* color values emerged among packaging treatments on day 6. By this point, sprouts in PP bags retained the lowest peak force (1.37 N), followed by PPp and MAP bags (1.42 N). Genotypic differences also influenced firmness, with SUPER5 consistently showing the lowest peak force.
Sensory evaluation revealed that sprouts in MAP bags scored highest in all attributes, including overall satisfaction, but had bacterial counts 1.4- to 3.0-fold higher than other packaging conditions.
Notably, the newly developed disease-resistant genotypes P22 and SUPER5 demonstrated reduced bacterial proliferation, with loads 1.3- to 2.0-fold lower at day 3 and 1.6- to 2.9-fold lower at day 6 compared to susceptible ‘CN84-1’. The activities of the oxidative enzymes peroxidase (POD) and polyphenol oxidase (PPO) did not vary among genotypes but fluctuated according to packaging conditions.
These findings underscore the importance of optimized packaging and genotype selection in preserving sprout quality, reducing contamination, and enhancing consumer satisfaction in Thailand’s sprout production.
