Abstract
The last decade has seen a growing interest in reducing postharvest decay.
In the research for new safe technologies the application of passive modified atmosphere packaging (MAP) has been shown to be a promising strategy to extend fruit quality.
Therefore, the aim of this work was to evaluate the effect of MAP on the organoleptic quality of cherries and cherry stems that are an important component of the acceptability of fresh cherries.
We found temperature (T), oxygen rate (O2), carbon dioxide (CO2), concentration and relative humidity (RH) represent important factors to preserve quality attributes, color parameters, texture and prolonging the post-harvest life of the fruit.
It was important to maintain a good cold chain from harvesting and during transportation to the market.
On the other hand, RH was also important for maintaining the visual quality of cherries, as it is the main factor associated with weight loss, particularly of the pedicel.
In conclusion, the investigation showed that the integration of good T and RH management with MAP is a potentially effective approach to prolong fruit quality delaying senescence and extending shelf life.
