Abstract
The experiment was conducted on the growth and development of Earlyred, Cardinal and J.H. Hale peach varieties during 1987 and 1988 in Adana and Pozanti (50 m and 1100 m above the sea level respectively). In order to study the growth and development of the fruits their physical (diameter, weight, volume, flesh firmness, density, colour of skin and flesh) and chemical (TSS, acid, total and reducing sugars) changes were measured and analysed during growth.
In both locations and years the growth of the fruits showed double sigmoid curves with the exception of Cardinal in Adana.
The growth curves were divided into four stages.
In Pozanti (high elevation) the varieties tested were smaller in size, weight and volume at ripening time than the ones in Adana (low elevations). The fruits in Pozanti softened more rapidly than their parallels in Adana.
At harvest the red color intensity of Pozanti fruits was higher than that of Adana.
Likewise their TSS and sugar contents were also higher and acid contents were lower.
