Abstract
The analysis of the interaction between environmental factors and the dynamics of the growth and composition of the grapevine berry is accomplished in this paper through different approaches.
Firstly it is underlined the important contribution of phenology, which provides useful information about the relation environment/cluster; particular references are devoted to the influence of the temperature on phases of shooting, flowering and veraison, in terms of thermic sums and daily thermic excursion.

The sugar accumulation is treated especially in relation to solar radiation, temperature’s trend and water availability during specific phases of cluster’s growth.

There is a quick mention on the trend of acid composition and the metabolism of phenolic substances in the berry related to the most important climatic elements.

The metabolism of main aromas till now studied, such as terpenes, norisoprenoids and methoxypyrazynes is dealt, with relation both to natural climatic factors and to particular agronomic strategies, which are capable of changing the micro-environment, such as training system, cluster shading and thinning, irrigation.

Finally there is a short mention about the importance of soil structure on berry composition.
