RATIONALISING OF CENTRIFUGE OLIVE OIL EXTRACTION SYSTEM

Abstract
Olive oil extraction techniques have developed throughout civilisation towards more and more use of mechanisation in order to reduce manpower and hence the cost.
The new system based on centrifuging the paste has permitted reducing the need for workers and increasing labour capacity.
However, as it is fully mechanised, it needs highly skilled labour.
The aim of this work is to rationalise the manipulation of such machines, as we look for the best conditions in use, by joining the capacity of apparatus, to rate of paste-diluting water, in order to ensure the minimum oil loss in “gringons” (cakes) and the rate of polyphenols in produced oil.
These tests (subject of this study) have been carried out in industrial oil plants, equipped with machines that recycle “margins” (wastewater) constantly.
We have considered as basis the theoretic capacity of the apparatus (100%), then we have varied the paste pump speed to obtain various capacities (85%, 90%, 110%) using different water-diluting rates varying from 300 to 700 litres per hour for every studied capacity.
All other criteria have been kept constant.
The results obtained show that using theoretic capacity leads to considerable loss in oil and polyphenols.
The least residual quantity of oil grignons (23.19 kg/l tone of olives), which means the highest extraction rate, has been obtained by using 90% of the theoretic capacity and 500l/h as paste-diluting water flow.
We can conclude that it is necessary to establish irrational equilibrium between the equipment used, accelerating or slowing down the speed of the paste pump, as well as the excess or the lack of paste-diluting water, which could cause considerable loss in oil (in the grignons) and in polyphenols.
