Flat peach: consumer test and valorisation of nutritional properties

Abstract
The increasing consumers awareness of the health benefits of fruit consumption has consequently augmented the demand for both fresh and processed fruits.
For this reason, in the last years, many fruit producers have employed innovative agronomic strategies to enhance the nutritional properties of the final product.
In this regard, in this study under the financial support of the operational group PRO-PLAT, PSR Marche, two consumer tests with adults (46 males and 54 female between 18 and 55 years old) or children (10 males and 18 females with 7 years old average) participants have been conducted, in order to compare both taste and texture liking of two peaches with different maturation and post-harvest treatment (ready to consume vs cold storage) of flat peach (Prunus persica (L.) Batsch. var. compressa Bean.) cultivar Platibelle. In both cases, the flat peach harvested ready-to-eat was more appreciated than the cold stored flat peach in terms of flavour, sweetness, crunchiness and texture.
Moreover, paper packaging with nutritional indications was the most favorite kind of pack.
In conclusion, this study has showed that ready-to-eat flat peach is more appreciated by consumers, independently from the age, than flat peach kept in cold storage, probably for its particular nutritional properties, which should be preserved by innovative post-harvest handling.
