Abstract
Sclereid formation in pear varieties was studied at three growing sites of Hungary during the period between 1983 and 1995. The maturity time and fruit size was considered in the classification of varieties.
More or less sclereids occur in every maturity group.
Fruit size, however, has a decisive role in the relative abundance or the consumer’s perceptibility of sclereids.
A method was developed for the quantitative determination and the grading of impact of sclereid content.
There are proofs that sclereids already appear in the flowers and young fruitlets.
