Abstract
Nowadays, in developed countries, the demand for fresh horticultural products is increasing and the quality of these productions is a subject of increasing importance.
Quality is wanted, by consumers, retailers, processors and shippers.
In the European Economic Community, standards and grades are now applied which are able to constitute a barrier for the import-export exchanges of many fruit and vegetables between European Countries.
Such can be the case, for the lettuce as regards its nitrate content, for the tomato as regards an uneven color, for all the crops as regards their content in pesticide residues.
And inspections are becoming stricter and stricter.
Therefore, the grower feels concerned with the quality of his crop even if this factor is not always taken into account in the price of the produce.
Even, if yield remains of prime importance for him, the improvement of quality must be taken into account all the more so as both horticultural production and market competition are increasing.
For these reasons, researcher workers in the field of horticulture, could not limit their studies anylonger to the analyzis of yield only.
They also had to deal with the problem of quality whatever their field of research, breeding, plant protection, technology or agronomy.
And it is no longer allowed to introduce a change in the techniques of production without analyzing beforehand its effect on the quality of the crop.
