Abstract
The bound water in living tissue plays a great role in the resistance to unfavourable environmental conditions.
Properties of bound water were studied by measuring the dielectric constant and water content of aqueous macromolecular solutions (biological model systems) and samples taken from the xylem of vine cane parallel to the longitudinal axis of it.
The measured data can be interpreted on the basis of a water structure model in which the total quantity of bound water is 50% more than the strongly bound water.
At the applied 6,3 GHz microwave frequency the value of dielectric constant of strongly bound water is
‘=5, however of dry solids of xylem is
‘=2,3. In the xylem of vine cane 25% water content is the critical limit of the viability.
The changes in the water structure of cane are determined by endogenous and external factors.
