Abstract
The concentration and presence of the different compounds of the grape berry depends, among other factors, on the ripeness level of the fruit and plant vigour.
Both factors, in turn, depend mainly on genetic factors such as cultivar, clone, rootstock, and environmental factors such as climate, type of soil, water supply, training system, pruning strategy, etc.
The effect of the pruning system was studied over three growing season in a trial set up.
Albariño vines pruned to two different systems: Cazenave-Marcon (CM) and Sylvoz (Sy), each with 50000 nodes/ha.
The pruning system did not produce statistically significant differences, either in production or in pruned wood, except in 1999. In this year, the Sylvoz system, with a yield 25% higher, has produced twice as much pruned wood as the CM system.
Neither did the pruning system cause significant differences in the parameters that define the technological quality of the grape, nor were there statistically significant differences in the concentration of free terpenes and grape terpenes.
However, the concentration of bound terpenes was higher in the Sy system than in the CM. These differences in the concentration of bound terpenes are due to the greater concentration of bound linalool found in the grapes produced under the Sylvoz system.
