Abstract
Different controlled atmospheres (CA) were tested for their ability to extend shelf life of red raspberries.
The cultivars tested were ‘Glen Clova’, ‘Glen Moy’, ‘Glen Prosen’, and ‘Willamette’. Compared with normal atmosphere, reduced O2 pressure and increased CO2 pressure reduced fruit rot, and the ripening was slower.
Colour development was slower and breakdown of acids, ascorbic acid and soluble solids were slower and fruit were firmer under CA conditions.
The most efficient CA regime was 10% CO2 + 2% O2.
