Abstract
This paper investigates the tomato agro-industrial system in Western Emilia.
In this area tomatoes for industrial processing is a typical product, which has very rapidly experienced considerable technological advances, so much so that all farming operations are by now fully mechanized.
The processing industry, which has largerly increased its average size and includes a large number of coperatives, continued on the usual lines, of focusing on concentrate, while paying increasing attention to the new products (pulp, passato etc.). A brief analysis of the main processed products (double concentrate and pulp) revealed a very unstable price trend, especially in the past 5 years.
This may be the result of the growing competition, with a soaring and more diversified supply and a minor demand increase.
