FOOD, HEALTH AND THE CONSUMER: THE KEY ROLE OF FRUIT AND VEGETABLES

Food, health and the consumer are best depicted as a triangle which accom-modates the three-way interaction between them.
Fruit (F) and vegetables (V) are major players in this triangle in their role as foods, their recognised beneficial effects on health, and as products familiar to consumers world-wide.
The ‘actors’ involved in ‘human nutrition thinking’ and dietary advice re F&V are cited. Food and nutrition policies/advice and dietary guidelines on F&V prevailing in Ireland and some other countries are listed together with their likely impact on trade and consumers.
The effects of crop production/storage and processing methods on the quality and nutritive value of F&V, and their products, are discussed under a number of headings.
This overview was conducted as a contribution to the ISAFRUIT project.
