Abstract
To find useful spinach varieties suitable for industrial processing, an experiment with ten varieties was carried out on the chernozem soil.
It was established that variety is an important yield factor in the agroecological conditions of Vojvodina Province since the yield difference between the best and the poorest variety was 13 t/ha.
The contents of nitrates (NO3) and nitrites (NO2) ranged from 66.Ø mg/kg to 442.5 mg/kg and from Ø 51 mg/kg to 3.28 mg/kg, respectively, in dependence of variety and year.
