Abstract
Five new cultivars of tomatoes, i.e.
UC-82, E-6203, PETO-86, UC-97–3 and FM-61012 were grown in two locations (Barrage and El-Noubariah) for processing evaluation.
Physical and chemical properties of tomato fruits, i.e, average weight of individual tomatoes, total solids, total soluble solids, acidity and pH were studied.
The results revealed that location, climatic conditions in addition to varietal characteristics affect the chemical and physical characteristics of tomatoes.
The most clearly affected were the pH and total solids both having a clear bearing on the suitability of any variety for processing.
