Abstract
Currently, 30% of the fruit grown in developing countries is lost to spoilage (Salunkhe and Desai, 1984). As production of temperate zone fruits in the tropics and sub-tropics becomes commercially feasible, attention to harvesting, preservation and packaging becomes important.
This paper presents an overview of emerging fruit processing technologies and their applicability to the tropics.
