Abstract
The sucrose content in apples was investigated as a function of ripeness at the time of harvest (Mutsu A, B, C), cultivars (Gloster [Glochenapfel Richared x Delicious], Idared [Jonathan x Wagnerapfel], Mutsu [Golden Delicious x Indo], Starking [NM 104 Starking clone]), radiation dose (0–5 kGy), calcium treatment (Gloster) and storage time.
The effect of time elapsing between harvest and radiation treatment on the change of sucrose content in apples (Mutsu) was also investigated.

It was stated that radiation treatment induced sucrose synthesis in different apple cultivars, and the effect was influenced by the ripeness and the radiation dose (0.5–2 kGy). The effect of irradiation was noted within 24 hours after treatment and it was temporary.
The differences among cultivars appeared as a function of storage time.
The differences among doses during storage gradually decreased, showing the temporary effect of irradiation.
There was no difference between irradiated and untreated apples at the end of the storage time.
The calcium treatment inhibited the radiation-induced increase of sucrose content.
