ETHYLENE, CO₂ AND AROMA VOLATILES PRODUCTION BY APPLE CULTIVARS

Two experiments were carried out at University of Hohenheim, Germany, during 1988 and 1990 to evaluate the capacity of ethylene, CO₂ and aroma production of 28 apple cultivars with economic importance in the world.
In 1988 fruits were analysed after 30–60 days of cold storage, and in 1990 the fruits were evaluated immediately after harvest during shelf-life at 20 °C. Apple cultivars were ordered according to their capacity of ethylene.
CO₂, and aroma production.
CO₂ production rates varied according to the cultivar from 5.3 to 14.9 ml/kgh and ethylene production rates from 2 to 220 μ/kgh.
Aroma production rates were expressed in relative values.
Most cultivars presented an relationship between CO₂ and ethylene production, however, a relationship between CO₂ and aroma or ethylene and aroma production capacity was less frequent.
