Abstract
Polyphenols (e.g. tannins) are good chelators of iron with which they form precipitates.
Experiments with mutants of a pathogenic bacterium, Erwinia chrysantemi, impaired in their siderophore-mediated iron transport system, suggest that polyphenols inhibit microorganism growth through iron deprivation.
It is proposed that iron deprivation in barks and heartwoods rich in polyphenols contribute to the protection of trees against invasion by pathogenic or decay microorganisms.
