CHANGE IN SUGAR CONTENTS AND COMPOSITION OF STRAWBERRY FRUIT DURING DEVELOPMENT

Two main strawberry (Fragaria x ananassa Duch.) cultivars in Japan ‘Nyoho’ and ‘Toyonoka’ were grown in forcing culture.
The primary fruits (receptacles of flower) in the terminal and the second clusters were sampled weekly from one week after anthesis until outer fruit became red-ripe (>95 % of surface became red). As fruit ripened, growth on a fresh weight bases was a characteristic sigmoidal curve.
The exponential growth stage and commercially harvested stage occurred earlier in fruit of ‘Toyonoka’ than in ‘Nyoho’. When fruit ripened, the total sugar (sucrose + glucose + fructose) content (g^-1FW) did not vary between cultivars.
However, in ‘Nyoho’, the level of sucrose was higher than that of glucose and fructose.
From ca. 40 days after anthesis, the rate of sucrose accumulation increased more rapidly than glucose or fructose to account for ca. 50% of the total sugar content by the ripe fruit.
In contrast, in ‘Toyonoka’, sucrose, glucose and fructose accumulation were not different and ripe ‘Toyonoka’ fruit contained equal amounts of three sugars.
The result of this experiment indicated that sucrose contents changed remarkably from ca. 40 days after anthesis particularly for ‘Nyoho’ and that the level of sucrose accumulation is cultivar dependant.
