Abstract
Four cultivars of olive viz.
Pendulino, Ascolano, Coratino and Frantoio growing in Mandi and Chamba regions of Himachal Pradesh were evaluated for their oil yield potentiality.
Maximum pulp recovery was recorded in Coratino (75.20 and 74.35%) cultivar grown in Chamba and Mandi regions, respectively.
The highest oil yield (43.08%) on moisture free basis was recorded in Frantoio cultivar grown in Mandi followed by Coratino cultivar of Chamba (42.70%) and Mandi (41.68%). Iodine value and free fatty acids in oil of various olive cultivars grown under different regions varied from 78.87 to 82.30 and 0.69 to 0.72 % respectively while, cultivar Pendulino grown in either of the regions showed higher degree of unsaturation as compared to other cultivars.
Saponification value among different cultivars ranged between 189.20 -192.60. Broadly, the quality characteristics of olive oil from different cultivars evaluated in the present study remained well within the prescribed limits specified for olive oil under the Prevention of Food Adulteration Act.
