Abstract

Plant-based coatings could be a strategy to maintain the volatiles profile and quality during storage of pineapple, one of the most consumed fruits worldwide.
This study evaluated the influence of plant-based coatings on the volatile profile and quality of pineapple during storage under room conditions. ‘Pérola’ pineapples were harvested at commercial maturity from a family farm orchard.
Fruits were washed, sanitized using a 200-ppm sodium hypochlorite solution, and left to dry before applying the following coatings: sunflower seeds infusion 3% (SS), fennel seeds infusion 3% (FS), cassava starch 1.5% + sunflower seeds infusion 3% (CS+SS), cassava starch 1.5% + fennel seeds infusion 3% (CS+FS), and control (without coating) (W). Pineapples were stored (23°C and 82±3% RH) for 18 days.
The sensory attributes were evaluated by twelve trained panelists.
The volatile compounds were evaluated by headspace-SPME-GC/MS and capillary nonpolar column.
In the typical volatiles profile of pineapple those that had large contribution were decanal, esters (ethyl hexanoate, ethyl pentanoate) followed by terpenes.
Ethyl hexanoate, the characteristic fruity aroma in pineapple, and decanal increased during storage in most of the coating treatments.
However, fruits coated with CS+FS showed lower decanal content at the 18^th day.
Ethyl pentanoate, which is present in unripe fruits, decreased in most coating treatments during storage and to a lesser extent in FS and CS + FS coated fruit.
Pineapples coated with CS+FS had good sensory scores for taste and appearance.
No off taste was noticed by the panelists during 18 days.
Coating pineapple with cassava starch 1.5% + fennel seeds infusion 3% (CS + SS) seems to be a suitable alternative for storing pineapple at room temperature in terms of maintaining the characteristic volatiles profile and keeping quality during 18 days.
