Abstract

High-pressure processing (HPP) has been mentioned as a useful tool to increase bioactive compounds extractability and bioaccessibility.
This technology could modify the fruit product functionality and improve the health-promoting characteristics associated to apple consumption.
The aim of the present study was to evaluate the effect of different HPP treatments (400, 500 and 600 MPa at 35°C for 5 min) on the total phenolic content (TP-FC) (Folin-Ciocalteu), flavonols and hydroxycinnamic acids (HPLC-DAD) and antioxidant capacity (AC) (DPPH^▪, ABTS^▪+, FRAP) of ‘Golden Delicious’ apple slices.
Two different European regions, Aragón in Spain (lowland climate) and north of Italy (mid-mountain climate) were assessed.
Quercetin-3-rhamnoside and cholorogenic acid were the major compounds detected in both Spanish and Italian apples.
Apples from Italy showed significantly (p<
0.05) higher total flavonols (324.68 µg g^-1 dw) than apples from Spain (247.35 µg g^-1 dw), but Spanish apples presented higher total hydroxycinnamic acids than the Italian apples (1184.4 and 1085.67 µg g^-1 dw, respectively). Treatment at 400 MPa increased by 31.3% the total flavonols extracted in the Spanish apples.
Nevertheless, HPP treatment at 600 MPa was more effective for the Italian apples by increasing 77.6 and 30.5% the total flavonols and hydroxycinnamic acids extracted, respectively.
Antioxidant capacity was higher in Italian apples than in Spanish ones.
AC was maintained after HPP at 400 and 500 MPa in the Italian apples and after 400 MPa in the Spanish apples.
However, HPP at 600 MPa produced a significant AC increase (p<
0.05) (13-42%) in the apples from Italy but a significant AC decrease (p<
0.05) (21-38%) in the apples from Spain.
Positive correlations were found between total polyphenols (flavonols + hydroxycinnamic acids) and TP-FC (r²=0.97 and r²=0.86), DPPH^▪ (r²=0.97 and r²=0.92), ABTS^▪+ (r²=0.98 and r²=0.90) and FRAP (r²=0.98 and r²=0.83) in Italian and Spanish apples, respectively.
