Abstract
The research was conducted to study the effect of new Hungarian and foreign cultivars on the quality of canned fruits.
Cvs.
Budapest, Mandulakajszi, Ceglédi biborkajszi and selections C. 326, Mk. 150 can be considered as excellent apricots for canning.
Canned fruits of good quality can be produced from Csongrádi kajszi, Gönci Magyar kajszi, Ligeti óriás, H. II 6/42 and 644/1. Poor quality is characteristic of MK. 132, Nagykorösi óriás, Bergeron and Tilton.
Canned fruits of 597/19, Canino, NJA1, K-3/10, Kécskei rózsa and C. 320 were disliked.
Relationships between texture, chemical analysis of raw fruits and the quality of canned ones were investigated.
