SUN-DRYING AND NUTRITIONAL COMPOSITION OF FLOUR OF NOVEL MUSA HYBRIDS

Abstract
Plantain and banana (Musa spp.) flour, known as ‘elubo ogede’ in Nigeria, is produced by sun-drying and milling the fruit’s pulp. Musa flour is an important food in the daily diet of diabetic people because of its low glycemic index.
However, the extent to which sun-drying influences the nutritional composition in the flour is unknown.
The objective of this study was to examine the effect of sun-drying on the mineral composition, antioxidant activity and anti-nutritional factors of five synthetic Musa spp. hybrids, namely ‘BITA-3’, ‘FHIA-25’, ‘PITA-17’, ‘PITA-24’, and ‘PITA-26.’ The preferred landrace ‘Agbagba’ and the cooking banana ‘Cadarba’ were also analyzed as standard reference cultivars.
Results showed that sun-drying significantly reduced iron, aluminum, magnesium, potassium, phosphorus, copper, sodium, manganese, boron, lead, selenium, cadmium and antioxidant activity.
Zinc, calcium, total polyphenol and total flavonoid content were not affected. ‘Agbagba’ had the highest level of iron (19.3 mg/kg) and aluminum content (43.4 mg/kg). Hybrids like ‘FHIA-25’, ‘PITA-17’ and ‘BITA-3’ had higher levels in some of the mineral elements studied than ‘Agbagba’ and ‘Cardaba’. ‘PITA-24’ had the highest level of antioxidant activity (35.2%), total polyphenols (87.0 mg/100 g) and total flavonoid (12.80 mg/ 100 g). The synthetic Musa spp. hybrids are superior to ‘Agbagba’ for some nutrients and their cultivation is recommended.
The traditional method of sun-drying plantain and banana pulp to produce flour for food production only marginally affects calcium, total polyphenols, or total flavonoid content.
These synthetic hybrids are good sources of essential minerals, and should be widely adopted for production and utilization.
