Abstract
Many investigations, reported in reviews Levitt (1966 and 1969), Parker, 1963 and Tumanov, 1967, show the biochemical make-up to play a positive role in cold hardiness of plants.
More specifically, soluble sugars and starch have been found to play a more positive rale in many species studied.
The hardining process is particularly important to apricot trees, since varieties differ widely in their ability to a high level of hardiness.
A better understanding of cold resistance and metabolic changes involved during hardining would aid the improvment and maintenance of apricot tree, since variation in carbohydrate content particularly soluble sugars, may affect cold hardiness and cold injury and related disorders appear to be associated with the short life of apricot tree under-unfavorable conditions.

In this study, 8 apricot varieties belonging to different groups, were compared biochemically.
The aim of this comparison is to find differences between varieties.
These differences will help plant breeder to select good parents for breeding a new apricot with more cold resistance on the basis of the well understanding of their biochemical changes occur during and after rest period.
