Abstract
In Peru, asparagus constitutes the most important vegetable for export.
The crop is grown along the coastal area of the country with a total of 7 819 ha.
Most of the producing areas(7 056 ha) are in the north where the crop has been traditionally grown for canned white asparagus.
However, the production of frozen and fresh asparagus has recently increased.
There are 566 ha for production of fresh green asparagus in the central coast (Ica). Most of the asparagus production is sent to Europe and to a lesser extent to the USA.

Growing of the crop in our country has two unique characteristics.
First, it can be produced all year round due to special climatic conditions.
Second, management of the water regime to induce dormancy of the crop allows to harvest the asparagus fields twice a year.
These exceptional growing conditions makes it possible to keep the asparagus industry active over the year and to export fresh produce at times when other countries cannot do so.
