Abstract
The physiology of carbohydrate metabolism (free sugars, fructooligosaccharides, starch) of different organs of Asparagus officinalis L. (shoot, buds, crowns, storage roots of various ages) was analysed.
By measuring the total plant mass during the year the relation between the loss of carbohydrates and the development of new roots, buds and spears could be eluminated.
The contribution of the various plant organs to the storage capacity of carbohydrates was described.
The physiological role of fructans as osmotic buffers was discussed.
