Some new jujube-processed products for the European market

Jujube is one of the oldest cultivated fruit trees in the world, and it is the most important species in the large cosmopolitan Rhamnaceae Family in terms of its economic, ecological, and social importance.
It is one of the most recently developed fruit crops outside China, creating an increasing interest among researchers, farmers, and consumers worldwide.
Even if jujube-derived food products are still seldom seen on the European market, we believe this fruit is extremely important for a healthy, fresh, and processed daily diet.
Therefore, jujube’s nutritional properties, such as high vitamin C content, antioxidant capacity, fibers, sweetening, and coloring capacity, can be combined into innovative products.
Here we present some new jujube products such as ice cream, protein bars, compote, cookies, etc., obtained for the “European taste”. Dehydrated fruits or freeze-dried jujube powder, as excellent sweeteners and healthy sugar substitutes, have been used regularly.
The products were tested and well accepted by Romanian consumers, and the next step will be the preparation for industrial production.
