Research progress on aroma components of jujube

Aroma is one of the factors that influence the selection of different jujube varieties, which has an important influence on the consumption of jujubes and the deep processing of jujube products.
Jujubes are a unique variety that is native to China.
As one of the ‘ five fruits ‘, jujube is rich in nutrients such as vitamins, sugars, and organic acids, and has high nutritional value.
At the same time, jujube, as a traditional Chinese medicine, is flat and sweet.
It has the effects of invigorating the spleen and tonifying blood, tonifying qi, nourishing the heart, and tranquilizing the mind.
In particular, the polysaccharide components in jujube enhance immunity, anti-oxidation, protect the liver, anti-inflammation, regulate blood sugar, and anti-tumor.
This paper reviewed the extraction methods, detection methods, and main types of jujube aroma.
The main problems in the current research on jujube aroma and the prospect of future research on jujube aroma were analyzed to provide the theoretical basis for studying jujube aroma and jujube cultivation.
