Advancement of organic acids in jujube fruits

Abstract
Jujube (Ziziphus jujuba Mill.), the most economically important fruit tree in Rhamnaceae, was domesticated from sour jujube (Z. jujuba Mill. var. spinosa (Bunge) Hu ex H.F.Chow.). Jujube fruits are rich in organic acids, important components affecting fruit flavor and consumer preference.
Here, we discuss the recent advances in the components and content of organic acids in jujube fruits.
Dynamic changes during the development of the jujube fruits are shown as well.
Moreover, we summarize the molecular and genetic mechanisms that underpin the metabolism of organic acids, especially malic acid and citric acid metabolism, and conclude the progress made in jujube fruit to date.
These may open new perspectives for the fine regulation of organic acids and effective fruit quality breeding in jujube.
