Characteristics of jujube fruit and its functional substance in South Korea

Abstract
In Korea, jujube (Ziziphus jujuba Mill.) is a familiar fruit planted at a villages entrance or front yard.
Jujube, which has been mainly used for oriental medicine and traditional events, has recently been in the limelight as a fruit, and consumer demand and cultivation area are increasing, centered on jujube, which bears large fruits.
Jujubes are cultivated in three to four varieties, including Bokjo, a common jujube, and Cheonwhang and Hwangsil, large-fruited jujubes.
Despite growing demand, the varieties grown are being simplified.
It is important to nurture new varieties to secure the diversity of jujube resources, but research and evaluation on morphological characteristics are insufficient.
Twenty species of jujube genetic resources were investigated for 10 qualitative traits and 16 positive traits, and classified into 4 groups.
Flowering time, leaf size, fruit shape, fruit size, seed shape, seed content, etc., were key resource classification characteristics.
Through the morphological characteristics of the resource, the CBJ0040 resource, which has a high seed formation rate, was selected as a valuable resource as a variant resource for the development of new varieties.
CBJ0042 resource, a mutant branch of Bokjo, was selected as a resource because it bore great fruit.
In addition, as a result of analyzing the functional substances of the flesh, three resources other than CBJ0040 were judged to have a high content of vitamin C, total polyphenols, and total flavonoids, and thus have value as medicinal materials and in the pharmaceutical industry.
