Abstract
In this article an attempt has been made to present all the relative and recent research activities in the field of post harvest physiology, storage and processing (canning, fruit puree production and drying) of apricots.
Physicochemical characteristics of the fruit in relation to its suitability for storage and processing are mentioned and factors which affect the storage and processing.
Suitable storage and processing conditions are presented.

Apricot Prunus armeniaca is a native of Central and Western China.
It is thought that the crop existed earlier than 2000 B.C. (Magness, 1951) and expanded to Southwest Asia before the time of Alexander the Great.
Its cultivation is known in Greece since the 4th century B.C.
