Abstract
Apricot processing by-products are utilized for production of fiber products from pulp and oil and protein concentrates from kernels.
Pulp, containing mainly fruit flesh is refined by removing of impurities, diluting with water, grinding and spray drying.
The fiber product had a crude fiber content of 52.6–61.7%, protein content of 15.6–20.8% and had good functional properties.
The kernels contain 49% oil which was extracted using n-hexane.
The oil was rich in oleic acid (68.9%). The kernel meal is used for protein isolation by protein extraction, isoelectric precipitation and freeze drying.
The protein products at a 75% yield had a low protein content (up to 53.5%), were light colored and had comparable functional properties to commercial soy isolates.
