Abstract
About a hundred people and 60 cultivars were involved in public organoleptic evaluations in which smell, skin, toughness, juiciness, texture, flavour and sweetness were evaluated.
With the aim to identify good judges and to recognize groups of judges with common tastes three variants of the experiment – paired comparison, block experiment and latin square design – were used.
With help of these methods the good and bad judges were found.
The group of bad judges forms a disturbing element in ranking.
However, bad judges order the cultivars similarly like the good ones.
The sensitivity of judges to recognize more than three characters is very low.
