A Chenin decision help system to predict grape berries maturity and anticipate wine potentialities

The main objective of our work is to develop a decision support tool on berry ripening for the Chenin blanc grape.
A model that links the sensory analysis of the berries to the type of wine to be made will also be discussed.
We are interested in all available sources of information (experimental data, scientific literature but also human expertise) to characterize the mechanisms of ripening in order to model the evolution of the maturity indicators considered during this period.
Several steps are necessary to carry out this approach: to make an inventory of the knowledge concerning the ripening of grape berries, to define the ripening indicators to be taken into account and the variables which influence their evolution.
Then, we have to define the interaction network, and thus the structure of the Bayesian network and evaluate its performance.
