Abstract
In Japan, about 26,400 tons of kiwifruit were produced in 1986. The production of kiwifruit has increased year by year.
But the problems during storage, such as softening, occurrence of ripe rot and refrigeration costs are also increasing.
We have studied the effect of an ethylene absorbing agent on the softening of kiwifruit during storage and have investigated the energy-saving storage using stone quarry caverns.
