Abstract
The ‘Jerusalem’ artichoke (Helianthus tuberosus L.; family Asteraceae) is a perennial herbaceous plant with significant commercial and ecological importance due to its stress tolerance and diverse applications.
This study evaluates the agro-morphologic and nutritional profile of four ‘Jerusalem’ artichoke genotypes (‘Rareș’, ‘Dacic’, ‘Flavius’, and ‘Tudor’) bred at the Vegetable Research and Development Station Buzau, Romania.
The experiments were carried out using the randomized block design in three replications.
After the harvest of tubers, physico-chemical parameters, including fruit firmness, total soluble content, dry matter, humidity, protein, and inulin content, were measured by standard methods.
Statistical analyses were performed using analysis of variance, followed by Duncan test.
Statistical differences were recorded between the nutrition profile of the studied genotypes. ‘Tudor’ genotype registered the highest content in dry matter (27.42%), being suitable for dry making products such as chips and flour.
Also, ‘Tudor’ cultivar demonstrated the highest content in inulin (52.37%), a key nutrient with several health benefits when consumed.
Additionally, ‘Rareș’ cultivar stood out with its exceptional fruit firmness (29.51 N), indicating a long shelf-life capacity, one of the most important traits of ‘Jerusalem’ artichoke quality. ‘Dacic’ cultivar recorded the highest protein potential (17.72%), knowing that the tuber protein is one of the large parts of the economic benefit of the crop.
These findings highlight the remarkable diversity and functional potential of ‘Jerusalem’ artichoke cultivars in various industries, emphasizing their significance in agriculture and beyond.
