Abstract
Although adverse effects of long term CA- and low pressure (LPS) storage on the production of volatile aroma substances – and hence consumer acceptibility – of apples have frequently been observed, it is not known which factor (s) in the storage procedure (low temperature, reduced O2-, increased CO2–3 altered C2H4 level) are responsible for this undesirable effect.
Ethylene seemed a likely candidate (Bangerth, 1984) so its role was investigated further.
