Abstract
Common bean (Phaseolus vulgaris L.) is one of the most important vegetable being the second most cultivated species after soya bean, from Fabaceae family.
The common bean is a good source of protein, has a high antioxidant activity and beneficial nutraceuticals such as polyphenols.
The purpose of this study was to assess the chemical compositions of some bean accessions in order to analyze their antioxidant activity, total polyphenol and protein content compared with control variant market cultivars.
The current study was designed to evaluate 10 climbing bean (L102, L103, L108, L110, L116, L120, L122, L123, L126, L140) accessions and 4 dwarf bean accessions (L7, L11, L31, L33). In order to have more conclusive comparison we have used one control variant for climbing bean, Maura 2000 and one for dwarf bean, Ioana cultivar.
Following the chemical analysis, it was found that L110 has the highest content in antioxidants (1624.04 mg TE 100 g‑1 FW), but also in polyphenols (114.84 mg GAE 100 g‑1 FW). At the same time, the protein content of L110 is also high, registering the second highest value (21.39%). The cultivar that registered the lowest values in terms of protein content (17.15%) and antioxidant activity (383.05 mg TE 100 g‑1 FW) was Ioana cultivar, followed by cultivar L33, which recorded the lowest values also in terms of polyphenol content (34.24 mg GAE 100 g‑1 FW). The control variant Maura 2000 registered average values, being in the middle of the ranking for all the chemical analyzes conducted.
Our study concluded that studied bean accessions have a high nutritional value, with higher content in bioactive compounds compared to control variants in terms of chemical compositions.
Further studies are needed in order to enrich the assortment currently on the market.
