Changes in ‘SunGold’ skin topography induced by controlled scuffing

Abstract
Kiwifruit (Actinidia chinensis var. chinensis) can develop superficial skin rub (SSR) when exposed to excessive abrasive forces.
The SSR refers to injuries that cause a browning discolouration of the skin, with minimal to no injury present in the flesh.
Presently SSR severity is assessed using a subjective image-based score chart.
However, the assessor’s subjective judgment can result in assessment errors of scored severities.
Hence, the development of an objective method is essential to standardise the assessment of SSR severity.
Fringe projection profilometry has previously been used to assess human skin injuries and lesions in the medical industry and more recently to assess skin topographical features of horticultural products.
Fringe projection creates a 3D reconstruction of imaged surfaces through projected pattern distortion (phase modulation). Topographical parameters can be extracted from these 3D reconstructions which quantitatively describe the surface of an object.
Thus, fringe projection may provide a method of objectively describing and classifying fruit with varying SSR severities.
This work investigated kiwifruit skin topographical changes resulting from SSR of different severities induced by controlled scuffing. ‘SunGold’ kiwifruit were sampled at commercial harvest maturity from three orchards in New Zealand at five different times (ISO weeks 11, 14, 16, 18, and 20) in 2022. Twenty-four fruit from each orchard and harvest time combination were imaged using fringe projection prior to and after controlled scuffing, and after two weeks of storage (0°C). The topographical parameters extracted with fringe projection revealed changes in skin topography between scuffed and non-scuffed fruit.
However, the extracted topographical parameters were unable to separate the SSR severities, nor were the at-harvest measurements predictive for susceptibility to SSR. Whether an image system with greater resolution such as scanning electron microscopy or alternative topographical analysis techniques with fringe projection may differentiate SSR severities requires further investigation.
